Ingredients
Serves 4
2 red bell peppers, sliced or julienned
3/4 cup of grated Parmesan cheese
12 ounces dry fettuccine pasta
3/4 cup of chicken stock
3/4 teaspoon of cayenne pepper
3 cloves garlic, finely chopped
1 cup of light or reduced fat sour cream
salt and pepper (to taste)
a dash of cinnamon (optional)
Directions
Bring to the boil a medium to large pot of lightly salted water. Gently add the fettuccine and cook for about ten minutes (until al dente).
While the pasta is cooking, lightly coat the bottom of a large frying pan with olive oil or Pam cooking spray. Heat the pan over medium heat. Once the pan is hot, add the garlic, cayenne pepper and the red bell pepper slices and cook for about five minutes.
Add the stock and sour cream and let the sauce come to a simmer. Simmer for five minutes (uncovered), then remove the pan from the heat and stir in the Parmesan.
Gently stir the sauce with the pasta and season with salt and pepper.
Serve with warm crusty bread (for soaking up the sauce).
